Ingredients

  • 500 grams beef sirloin, thinly sliced
  • 60 ml soy sauce
  • 60 ml calamansi juice (or lemon juice)
  • 3 pieces garlic cloves, minced
  • 2 pieces onions, large, sliced into rings
  • 3 tablespoons vegetable oil
  • 125 ml water
  • 1 teaspoon sugar
  • 0.5 teaspoon black pepper, ground

Directions

Step 1

In a large bowl, combine the soy sauce, calamansi juice, and minced garlic. Add the sliced beef and mix well, ensuring the beef is coated evenly with the marinade.

Step 2

Cover the bowl with plastic wrap and let the beef marinate in the refrigerator for at least 30 minutes, or up to 2 hours for a more intense flavor.

Step 3

Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the onion rings and sauté until they become translucent and slightly caramelized. Remove onions from the skillet and set them aside.

Step 4

In the same skillet, add the remaining tablespoon of oil. Drain the beef from the marinade and reserve the liquid. Carefully place the beef in the hot skillet in a single layer and sear for about 2 minutes on each side until browned. This may need to be done in batches to avoid overcrowding the pan.

Step 5

Once all the beef slices are browned, return them all to the skillet. Pour the reserved marinade into the skillet along with the water and sugar. Stir to combine.

Step 6

Bring the mixture to a simmer, then lower the heat to medium. Cover the skillet and let the beef cook for about 20 to 25 minutes, or until it becomes tender and the sauce thickens slightly.

Step 7

Add the black pepper and the sautéed onions back to the skillet. Stir gently to incorporate everything, and let it heat through for another 2-3 minutes.

Step 8

Serve the bistek hot with steamed white rice, and enjoy your savory and tangy Filipino feast.
