Ingredients

  • 4 pieces Halibut steak
  • 1 cup Fresh basil leaves
  • 2 cloves Garlic cloves
  • 2 tablespoons Pine nuts
  • 0.25 cup Parmesan cheese
  • 0.33 cup Extra virgin olive oil
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 0.25 cup All-purpose flour
  • 2 tablespoons Unsalted butter

Directions

Step 1

Pat the halibut steaks dry with a paper towel, then season both sides with salt and black pepper.

Step 2

Lightly dredge the halibut steaks in the all-purpose flour, shaking off excess flour.

Step 3

Heat a large skillet over medium heat and melt the butter. Once the butter starts to foam, add the halibut steaks and cook for 4-5 minutes per side, or until the fish is golden and just cooked through. Remove from the skillet and set aside on a plate.

Step 4

To make the Genovese-style sauce, combine basil leaves, garlic cloves, pine nuts, Parmesan cheese, olive oil, lemon juice, and a pinch of salt in a food processor. Blend until smooth. Taste and adjust seasoning, if needed.

Step 5

Spoon the Genovese sauce generously over each halibut steak.

Step 6

Serve immediately with your choice of side, such as roasted vegetables, fresh pasta, or a crisp salad. Enjoy!
