Ingredients

  • 1 lb Ground beef
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 cup Frozen mixed vegetables (peas, carrots, corn, and green beans)
  • 1 15-oz can Diced tomatoes (canned, undrained)
  • 1 10.5-oz can Cream of mushroom soup
  • 1 tbsp Worcestershire sauce
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 cup Bisquick Original Pancake and Baking Mix
  • 1 large Egg
  • 0.5 cup Milk
  • 1 cup Shredded cheddar cheese

Directions

Step 1

Preheat your oven to 400°F (200°C). Grease a 9x13-inch baking dish and set aside.

Step 2

In a large skillet over medium heat, cook the ground beef until browned and fully cooked, about 6-8 minutes. Drain any excess grease.

Step 3

Add the diced onion and minced garlic to the skillet. Cook for 2-3 more minutes until the onion softens.

Step 4

Stir in the frozen mixed vegetables, diced tomatoes with their juice, cream of mushroom soup, Worcestershire sauce, salt, and black pepper. Mix well and let simmer for 2-3 minutes.

Step 5

Pour the beef mixture into the prepared baking dish and spread evenly.

Step 6

In a medium bowl, whisk together the Bisquick mix, egg, and milk until smooth. Pour the batter over the beef mixture in the baking dish, spreading it out with a spatula to cover evenly.

Step 7

Top the casserole with shredded cheddar cheese.

Step 8

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the cheese is melted and bubbly.

Step 9

Remove from the oven and let the casserole sit for 5 minutes before serving.

Step 10

Serve warm and enjoy this comforting cowboy casserole!
