Ingredients

  • 2 cups Dried pinto beans
  • 1 large Yellow onion
  • 4 cloves Garlic cloves
  • 6 cups Vegetable broth
  • 1.5 teaspoons Cumin
  • 1 teaspoon Chili powder
  • 1.5 teaspoons Salt
  • 2 tablespoons Olive oil
  • 0.25 cup Fresh cilantro (optional)
  • 1 whole Lime (optional, for garnish)

Directions

Step 1

Rinse the dried pinto beans under running water and pick out any debris or damaged beans.

Step 2

Peel and quarter the yellow onion, and peel the garlic cloves.

Step 3

Add the rinsed beans, onion quarters, whole garlic cloves, vegetable broth, cumin, chili powder, and salt into a Crock Pot.

Step 4

Cover the Crock Pot with the lid and set it to cook on low for 8 hours, or until the beans are very tender.

Once fully cooked, remove the onion pieces with a slotted spoon and discard them. Reserve about 1 cup of the bean cooking liquid for adjusting the consistency later.
