Ingredients

  • 3 pieces Edible bird's nest
  • 4 cups Chicken broth
  • 2 cups Water
  • 1 slices Ginger
  • 1 tablespoon Rock sugar
  • 0.5 teaspoon Salt
  • 1 Egg white
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water

Directions

Step 1

Soak the edible bird's nests in a large bowl of room temperature water for at least 4 hours or overnight to soften and expand.

Step 2

Gently rinse the soaked nests under running water, using tweezers to remove any lingering impurities or feathers. Drain thoroughly.

Step 3

In a medium saucepan, combine 2 cups of water and the cleaned bird's nests. Bring to a boil over medium heat, then reduce to a simmer. Cook for approximately 30 minutes until the nests become gelatinous and translucent.

Step 4

Meanwhile, in a separate pot, bring the chicken broth and ginger slice to a gentle simmer over medium heat.

Step 5

Add the cooked bird's nests to the simmering chicken broth, along with the rock sugar and salt. Stir to combine and continue simmering for another 45 minutes.

Step 6

In a small bowl, whisk the egg white until foamy and set aside.

Step 7

Dilute the cornstarch with 2 tablespoons of water in a separate small bowl to create a slurry.

Step 8

Gradually pour the egg white into the simmering soup in a thin stream, stirring constantly with a spoon to form egg ribbons.

Step 9

Slowly add the cornstarch slurry to the soup, stirring continuously until the soup slightly thickens.

Step 10

Taste the soup and adjust the seasoning with additional salt or sugar if needed. Remove the ginger slice before serving.

Step 11

Ladle the Bird's Nest Soup into individual bowls and serve immediately, hot.
