Ingredients

  • 1 lb ground beef
  • 1 yellow onion, finely chopped
  • 2 cups frozen mixed vegetables (peas, carrots, corn)
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp all-purpose flour
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 4 russet potatoes, peeled and cut into chunks
  • 4 tbsp unsalted butter
  • 0.5 cup heavy cream
  • 1.5 cups shredded cheddar cheese
  • 0.5 tsp paprika (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spoon. Drain any excess fat.

Step 3

Add the chopped onion to the skillet with the ground beef and sauté until softened, about 5 minutes.

Step 4

Stir in the frozen mixed vegetables and cook for an additional 3 minutes.

Step 5

Add the tomato paste, beef broth, Worcestershire sauce, and flour to the skillet. Stir well to combine and cook for 2-3 minutes until the mixture thickens. Season with salt and black pepper, then remove from heat.

Step 6

In a large pot, boil the potato chunks in salted water for 15-20 minutes, or until tender. Drain well.

Step 7

Mash the potatoes with the butter and heavy cream until smooth and creamy. Stir in 1 cup of the shredded cheddar cheese and mix until combined.

Step 8

Spread the beef and vegetable mixture evenly into the bottom of a 9x13-inch baking dish.

Step 9

Spoon the mashed potatoes over the beef mixture, spreading them evenly to cover the surface. Use the back of a spoon to create a decorative swirl pattern, if desired.

Step 10

Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the mashed potatoes.

Step 11

Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbling.

Step 12

Optional: For a golden crust, broil the dish on high for 2-3 minutes, keeping a close eye to avoid burning.

Step 13

Remove from the oven and let the Shepherd's Pie cool for 5 minutes. Garnish with a sprinkle of paprika, if desired, and serve warm.
