Ingredients

  • 8 cups (cubed) day-old bread (French bread or brioche)
  • 4 tablespoons unsalted butter
  • 2 large apples (peeled, cored, and sliced)
  • 0.5 cup granulated sugar
  • 0.25 cup light brown sugar (packed)
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 4 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 teaspoons vanilla extract
  • 0.25 cup rum or brandy
  • 2 tablespoons powdered sugar (optional, for garnish)

Directions

Step 1

Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or nonstick spray.

Step 2

In a large skillet, melt the butter over medium heat. Add the sliced apples and cook for 5-7 minutes, stirring occasionally, until softened and lightly caramelized.

Step 3

In a large mixing bowl, combine the granulated sugar, brown sugar, cinnamon, and nutmeg. Whisk in the eggs until smooth, then add the milk, heavy cream, and vanilla extract. Mix until well incorporated.

Step 4

Add the cubed bread to the mixing bowl and gently fold until the bread absorbs most of the custard mixture. Let it sit for 5 minutes to fully soak.

Step 5

Fold the caramelized apples into the bread and custard mixture. Transfer the mixture to the prepared baking dish, spreading it out evenly.

Step 6

Bake for 40-45 minutes, or until the pudding is golden brown and set in the center. A toothpick inserted should come out mostly clean.

Step 7

While the pudding bakes, warm the rum or brandy in a small saucepan over low heat. Remove from heat just as the pudding is ready to serve.

Step 8

Once the pudding is out of the oven, carefully pour the warmed rum evenly over the top of the dessert. Using a long lighter, ignite the alcohol. Step back and let the flames burn off safely (this should last a few seconds).

Step 9

Allow the flambé to finish naturally, then serve warm. Optionally, garnish with powdered sugar before serving.
