Ingredients

  • 250 g raisins
  • 250 g sultanas
  • 150 g currants
  • 100 g glacé cherries (chopped)
  • 100 g mixed peel
  • 100 g dried apricots (chopped)
  • 100 ml brandy
  • 100 g plain flour
  • 100 g fresh breadcrumbs
  • 150 g brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp ground ginger
  • 125 g butter (unsalted, melted)
  • 3 eggs
  • 100 ml milk
  • 2 tbsp golden syrup
  • 1 tsp bicarbonate of soda
  • 1 tbsp butter (for greasing)

Directions

Step 1

Place the raisins, sultanas, currants, glacé cherries, mixed peel, and dried apricots in a large bowl. Pour the brandy over the fruit, stir well, cover, and let soak overnight.

Step 2

Grease a 1.2-liter pudding basin with butter and line the bottom with a round of parchment paper.

Step 3

In a large mixing bowl, combine the soaked fruit mixture, plain flour, breadcrumbs, brown sugar, cinnamon, nutmeg, and ginger. Mix until the fruit is coated with the dry ingredients.

Step 4

In a separate bowl, whisk together the melted butter, eggs, milk, and golden syrup. Pour this wet mixture into the dry ingredients and stir until well combined.

Dissolve the bicarbonate of soda in 1 teaspoon of hot water, then stir it into the pudding mixture.

Spoon the mixture into the prepared pudding basin and smooth the top. Cover the basin with a layer of parchment paper and a layer of foil, pleated in the center to allow for expansion. Secure with kitchen string around the rim of the basin.

Place an upturned saucer or trivet in the bottom of a large pot. Set the pudding basin on top, then pour in enough boiling water to come halfway up the sides of the basin.

Cover the pot with a lid and steam the pudding over low heat for 4 hours, checking occasionally to ensure the water level doesn't drop too low. Top up with boiling water as needed.

Carefully remove the pudding basin from the pot and allow to cool for 10 minutes. Remove the foil and parchment paper, then run a knife around the edges and invert the pudding onto a serving plate.
