Sort and rinse the dried navy beans. Place beans in a large bowl and cover them with water. Soak overnight, or use the quick-soak method by boiling for 2 minutes, removing from heat, and allowing to sit for 1 hour.
Drain and rinse the soaked beans thoroughly. Set aside.
In a large stockpot or Dutch oven, combine the soaked beans, ham hock or diced ham, chicken broth, and water. Bring the mixture to a boil over medium-high heat.
Reduce the heat to low, cover, and simmer for 1 hour, stirring occasionally.
Add the chopped onion, diced carrots, diced celery, minced garlic, bay leaf, salt, and black pepper to the pot. Stir well to incorporate.
Continue simmering on low heat for an additional 1 hour, or until the beans are tender and the soup has thickened slightly. Remove the ham hock (if used), shred the meat, and return it to the soup.
Taste and adjust seasoning with additional salt or pepper, if needed. Remove and discard the bay leaf.
