Ingredients

  • 500 g Button mushrooms
  • 60 ml Olive oil
  • 2 tbsp Red wine vinegar
  • 2 minced Garlic cloves
  • 1 tsp Fresh thyme leaves
  • 2 tbsp Fresh parsley
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 tsp Red chili flakes
  • 1 Bay leaf
  • 250 ml Water

Directions

Step 1

Clean the mushrooms by brushing off any dirt or gently wiping them with a damp paper towel. Do not wash them in water to prevent sogginess.

Step 2

In a medium-sized saucepan, combine olive oil, red wine vinegar, garlic, thyme leaves, bay leaf, salt, black pepper, and red chili flakes.

Step 3

Add water to the saucepan and bring the mixture to a simmer over medium heat.

Step 4

Once simmering, add the mushrooms to the saucepan. Stir well to ensure they are evenly coated with the marinade.

Step 5

Reduce the heat to low and cook the mushrooms for 15–20 minutes, stirring occasionally, until they are tender and fully infused with the marinade.

Remove the saucepan from heat and allow the mushrooms to cool slightly.

Step 7

Transfer the marinated mushrooms to a serving dish, discarding the bay leaf.

Step 8

Sprinkle freshly chopped parsley over the mushrooms as a garnish.

Serve warm, at room temperature, or chilled. Store leftover mushrooms in an airtight container in the refrigerator for up to 5 days.
