Ingredients

  • 1 pound dried navy beans
  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 ham hock (or diced cooked ham)
  • 8 cups chicken broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 teaspoon smoked paprika
  • 2 tablespoons parsley, chopped (for garnish)

Directions

Step 1

Rinse the dried navy beans under cold water, removing any debris. Place them in a large bowl, cover with water, and soak overnight (or use the quick soak method by boiling the beans for 2 minutes and letting them sit for 1 hour). Drain and rinse before using.

Step 2

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté for 5-7 minutes until softened.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the ham hock (or diced cooked ham), soaked navy beans, chicken broth, bay leaves, dried thyme, salt, black pepper, and smoked paprika to the pot. Stir everything together.

Step 5

Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 1.5 to 2 hours, or until the beans are tender and the flavors have melded together. Stir occasionally and check the liquid level, adding more broth or water if necessary.

Step 6

Remove the ham hock from the pot. If using, shred any meat from the ham hock and return it to the soup. Discard the bone and any excess fat.

Step 7

Taste the soup and adjust seasoning with more salt and pepper if needed.

Step 8

Remove the bay leaves before serving. Ladle the soup into bowls, garnish with chopped parsley, and serve hot with crusty bread or crackers on the side.
