Ingredients

  • 4 medium Carrots
  • 2 medium Zucchini
  • 2 large Red bell peppers
  • 1 large Red onion
  • 500 grams Baby potatoes
  • 3 tablespoons Olive oil
  • 3 Garlic cloves, minced
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 200°C (400°F). Line a large baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

Wash and peel (if necessary) all the vegetables. Cut the carrots into sticks, zucchini into half-moons, red bell peppers into strips, red onion into wedges, and baby potatoes into halves or quarters depending on their size.

Step 3

In a large mixing bowl, combine the prepared vegetables. Drizzle with olive oil and sprinkle with minced garlic, dried thyme, dried rosemary, salt, and black pepper. Toss until all the vegetables are evenly coated in the seasoning.

Step 4

Spread the seasoned vegetables in a single layer on the prepared baking sheet. Ensure they are not overcrowded to allow for even roasting.

Step 5

Roast in the preheated oven for 30-35 minutes, stirring halfway through, until the vegetables are tender and caramelized at the edges.

Step 6

Remove the vegetables from the oven and let them cool slightly. If desired, sprinkle with chopped fresh parsley for garnish before serving.

Step 7

Serve warm as a side dish to your favorite proteins or as a standalone vegetarian entrée.
