Ingredients

  • 500 grams All-purpose flour
  • 350 milliliters Water
  • 7 grams Instant yeast
  • 7 grams Sugar
  • 10 grams Salt
  • 80 milliliters Olive oil
  • 2 tablespoons Fresh rosemary (optional)
  • 1 tablespoon Flaky sea salt

Directions

Step 1

In a large bowl, mix together the flour, instant yeast, sugar, and salt.

Step 2

Add 300 milliliters of warm water (about body temperature) and 50 milliliters of olive oil to the dry ingredients. Mix until a rough dough forms.

Step 3

Transfer the dough to a floured surface and knead for about 8-10 minutes, or until the dough is smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5-6 minutes.

Step 4

Lightly coat a clean bowl with olive oil and place the dough into the bowl, turning it to coat. Cover with a kitchen towel or plastic wrap, and let the dough rise in a warm place for 1 hour or until doubled in size.

Step 5

Once the dough has risen, generously coat a 9x13 inch baking pan with 20 milliliters of olive oil. Transfer the dough to the prepared pan and gently press it to spread evenly to the edges. If it resists stretching, let it rest for 10 minutes and try again.

Step 6

Cover the pan with a kitchen towel and let the dough rise for an additional 30 minutes.

Step 7

Preheat your oven to 220°C (430°F).

Step 8

After the dough has risen, use your fingers to create dimples all over the surface of the dough. Drizzle the remaining 10 milliliters of olive oil on top and sprinkle with fresh rosemary (if using) and flaky sea salt.

Step 9

Bake in the preheated oven for 20-25 minutes or until the focaccia is golden brown on top.

Step 10

Remove from the oven and let it cool for about 10 minutes before cutting into pieces and serving.
