Ingredients

  • 3 cups whole wheat flour
  • 1 cup ground flaxseed
  • 1 cup rolled oats
  • 1 cup bread flour
  • 2.25 teaspoons instant yeast
  • 3 tablespoons honey
  • 2 teaspoons salt
  • 1.5 cups warm water
  • 3 tablespoons olive oil
  • 2 tablespoons psyllium husk powder
  • 0.5 cup sunflower seeds (optional)

Directions

Step 1

In a large mixing bowl, combine the whole wheat flour, ground flaxseed, rolled oats, bread flour, instant yeast, salt, and psyllium husk powder. Stir well to distribute the dry ingredients evenly.

Step 2

In a separate bowl, mix the warm water, honey, and olive oil until the honey dissolves completely.

Step 3

Gradually pour the wet ingredients into the dry mixture, stirring with a wooden spoon or spatula until a sticky dough forms. If using sunflower seeds, fold them into the dough at this stage.

Step 4

Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes until the dough is smooth and elastic. Alternatively, use a stand mixer with a dough hook attachment for 5-7 minutes on medium speed.

Step 5

Shape the dough into a ball and place it in a lightly greased bowl. Cover with a clean kitchen towel or plastic wrap and let it rise in a warm spot for about 1 hour, or until doubled in size.

Step 6

Punch down the dough to release air, then shape it into a loaf. Place the loaf in a greased 9x5-inch bread pan.

Step 7

Cover the pan loosely and let the dough rise again for about 30 minutes, or until it rises just above the edge of the pan.

Step 8

Preheat your oven to 375°F (190°C).

Step 9

Bake the bread for 35-40 minutes, or until the top is golden brown and the loaf sounds hollow when tapped on the bottom.

Step 10

Remove the bread from the oven and let it cool in the pan for 5 minutes, then transfer it to a wire rack to cool completely before slicing.
