Ingredients

  • 4 pieces Chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 3 cloves Garlic, minced
  • 2 cups Button mushrooms, sliced
  • 1 cup Chicken broth
  • 0.5 cup Heavy cream
  • 3 tablespoons Lemon juice
  • 1 teaspoon Fresh thyme leaves
  • 2 tablespoons Fresh parsley, chopped
  • 2 tablespoons All-purpose flour
  • 2 tablespoons Water
  • 1 whole lemon Zest of one lemon

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the chicken breasts and sear them for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, add the remaining olive oil and butter. Once melted, sauté the minced garlic for 1 minute until fragrant.

Add the sliced mushrooms to the skillet and cook for 5-6 minutes until they release their moisture and become tender.

Pour in the chicken broth, heavy cream, and lemon juice. Stir well to combine.
