Ingredients

  • 8 pieces Whole roasted green chiles
  • 2 cups Monterey Jack cheese, shredded
  • 1 cup Cheddar cheese, shredded
  • 4 pieces Large eggs
  • 1.5 cups Whole milk
  • 2 tablespoons All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 1 4-ounce can Canned diced green chiles
  • 1 as needed Cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with cooking spray.

Step 2

If using fresh whole roasted green chiles, peel off the skin, remove the seeds, and pat them dry with paper towels. Set aside.

Step 3

In a medium mixing bowl, whisk together the eggs, milk, flour, baking powder, salt, and black pepper until smooth and well combined.

Step 4

Layer half of the roasted green chiles in the prepared baking dish. Spread half of the shredded Monterey Jack cheese and Cheddar cheese evenly over the chiles.

Step 5

Pour half of the egg mixture over the cheese layer. Sprinkle the canned diced green chiles over this layer for an added boost of flavor.

Step 6

Repeat the layering process: add the remaining green chiles, then the remaining shredded cheeses, and finally pour over the rest of the egg mixture.

Step 7

Bake in the preheated oven for 35-40 minutes, or until the casserole is set, puffed, and golden on top.

Step 8

Remove from the oven and allow the casserole to cool for about 5 minutes before slicing and serving.

Step 9

Serve warm as a main dish or side, and enjoy the cheesy, flavorful layers of this Chile Relleno Casserole!
