Ingredients

  • 2 ripe bananas
  • 75 grams unsalted butter (melted)
  • 120 grams brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 250 milliliters milk
  • 150 grams self-raising flour
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon baking powder
  • 50 grams caster sugar
  • 100 milliliters golden syrup
  • 250 milliliters boiling water

Directions

Step 1

Preheat your oven to 180°C (350°F) and lightly grease a 1.5-liter (6-cup) capacity baking dish.

Step 2

Mash the ripe bananas in a mixing bowl until smooth.

Step 3

Add the melted butter, brown sugar, vanilla extract, milk, and mashed bananas into the bowl. Whisk until well combined.

Step 4

Sift the self-raising flour, ground cinnamon, and baking powder into the wet mixture. Gently fold together until no flour pockets remain. Be careful not to overmix.

Step 5

Pour the batter into the prepared baking dish and spread it out evenly.

Step 6

In a small bowl, mix the caster sugar with the golden syrup. Sprinkle it evenly over the batter in the dish.

Step 7

Carefully pour the boiling water over the back of a spoon onto the surface of the pudding. This will help the caramel sauce form as the pudding bakes.

Step 8

Bake in the preheated oven for 35 minutes or until the top is golden brown and firm but the base is saucy.

Step 9

Remove from the oven and let it rest for 5 minutes before serving.

Step 10

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.
