In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, milk, egg, minced garlic, parsley, salt, and black pepper. Mix gently with your hands until the ingredients are just combined. Avoid overmixing as it can make the meatballs dense.
Using your hands or a small scoop, form the meat mixture into golf ball-sized meatballs, about 1.5 inches in diameter. You should end up with roughly 16 meatballs.
Heat the olive oil in a large skillet over medium heat. Once hot, add the meatballs in batches, making sure not to overcrowd the pan. Cook the meatballs for about 2-3 minutes per side, turning to brown them evenly. They do not need to be cooked through at this stage.
Remove the browned meatballs from the skillet and set aside. In the same skillet, add the marinara sauce and bring it to a simmer.
Gently place the browned meatballs into the marinara sauce. Cover the skillet with a lid and simmer on low heat for 20 minutes, or until the meatballs are fully cooked through (internal temperature of 165°F). Stir occasionally to ensure even cooking.
While the meatballs are simmering, prepare the sub rolls. Preheat your oven to 375°F. Split the sub rolls lengthwise without cutting all the way through. In a small bowl, melt the butter and mix it with the garlic powder.
Brush the inside of each sub roll with the garlic butter mixture. Place the rolls on a baking sheet and toast in the oven for about 5 minutes, or until lightly golden.
Once the meatballs are cooked, assemble the subs. Place 4 meatballs into each toasted sub roll, spooning extra marinara sauce over the top. Sprinkle the shredded mozzarella cheese over the meatballs.
Place the assembled subs back into the oven for 3-5 minutes, or until the cheese is melted and bubbly.
