Ingredients

  • 1 lb Ribeye steak
  • 2 medium Yellow onion
  • 2 tbsp Butter
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 4 slices Provolone cheese
  • 2 large Sub rolls
  • 2 tbsp Mayonnaise
  • 0.5 tsp Garlic powder

Directions

Step 1

Begin by preparing the onions: Peel and thinly slice the yellow onions.

Step 2

Heat a large skillet over medium heat and add the butter and olive oil.

Step 3

Once the butter has melted, add the sliced onions and stir to coat them evenly in the fat.

Step 4

Sprinkle a pinch of salt over the onions and cook them, stirring occasionally, for 10-12 minutes until they are soft and golden brown. Set aside.

Step 5

While the onions are cooking, trim excess fat from the ribeye steak and slice it as thinly as possible. You can partially freeze the steak for 20 minutes beforehand to make slicing easier.

Step 6

Season the steak slices with the salt, black pepper, and garlic powder.

Step 7

In the same skillet used for the onions, increase the heat to medium-high and add the seasoned steak slices.

Step 8

Cook the steak for 2-3 minutes or until just browned, stirring frequently to ensure even cooking. Do not overcook, as this will cause the steak to dry out. Remove from heat.

Step 9

Slice the sub rolls lengthwise but not all the way through, creating a pocket for the filling.

Step 10

Spread 1 tablespoon of mayonnaise inside each sub roll for added creaminess and flavor.

Step 11

Preheat the broiler on high and place the provolone cheese slices inside each sub roll.

Step 12

Toast the sub rolls under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.

Step 13

Remove the rolls from the oven and fill each one with a generous portion of the cooked steak and caramelized onions.

Step 14

Serve the subs hot with your favorite sides, such as chips, pickles, or a crisp salad, and enjoy Big John's Steak and Onion Sub!
