Ingredients

  • 4 large caps Portabella mushrooms
  • 3 tablespoons Olive oil
  • 2 tablespoons Soy sauce
  • 1 tablespoon Balsamic vinegar
  • 1 teaspoon Brown sugar
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Salt
  • 0.5 cup BBQ sauce

Directions

Step 1

1. Clean the portabella mushroom caps by gently brushing off any dirt with a damp paper towel. Remove the stems and use a spoon to scrape out the gills if desired.

Step 2

2. In a small bowl, whisk together olive oil, soy sauce, balsamic vinegar, brown sugar, smoked paprika, garlic powder, onion powder, black pepper, and salt to create the marinade.

Step 3

3. Place the mushroom caps in a shallow dish or resealable plastic bag and pour the marinade over them. Make sure each cap is well-coated. Let the mushrooms marinate for at least 15 minutes, flipping them halfway through.

Step 4

4. Preheat your grill to medium heat (about 375°F). Lightly oil the grill grates to prevent sticking.

Step 5

5. Remove the mushrooms from the marinade, allowing any excess to drip off, and place them on the preheated grill, gill side down. Cook for 4-5 minutes per side, until tender and slightly charred.

Step 6

6. During the last minute of grilling, brush the tops of the mushrooms generously with BBQ sauce.

Step 7

7. Remove the mushrooms from the grill and let them rest for a couple of minutes before serving. Optionally, slice the mushrooms and serve them on top of salads, in sandwiches, or as a standalone side dish.
