  • 4 cloves Garlic (minced)
  • 1 14.5 oz can Fire-roasted diced tomatoes (with juices)
  • 2 tbsp Tomato paste
  • 4 cups Chicken broth
  • 2 tbsp Cajun seasoning
  • 1 tsp Smoked paprika
  • 1 tsp Dried thyme
  • 2 Bay leaves
  • 1 tsp Worcestershire sauce
  • 2 cups Long-grain white rice (cooked)
  • 2 Scallions (sliced, for garnish)
  • 2 tbsp Fresh parsley (chopped, for garnish)
  • 0 Hot sauce (optional, to taste)

Directions

Step 1

Heat olive oil in a large pot over medium heat. Add sliced andouille sausage and cook until browned, about 3-4 minutes. Remove sausage and set aside, leaving the drippings in the pot.

Step 2

Add diced onion, green bell pepper, and celery to the pot. Sauté for 5-7 minutes until softened and fragrant. Stir in the minced garlic and cook for an additional minute.

Step 3

Add the fire-roasted diced tomatoes, tomato paste, chicken broth, Cajun seasoning, smoked paprika, dried thyme, bay leaves, and Worcestershire sauce. Stir well to combine.
