Ingredients

  • 5 lbs Bone-in pork shoulder (pork butt)
  • 6 large Garlic cloves, minced
  • 3 tbsp Olive oil
  • 2 tbsp Salt
  • 1 tbsp Black pepper
  • 2 tbsp Smoked paprika
  • 1 tbsp Cumin
  • 2 tbsp Brown sugar
  • 2 tbsp Apple cider vinegar
  • 2 tsp Dried oregano
  • 2 cups Chicken stock (or water)

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Pat the pork shoulder dry with paper towels and place it in a roasting pan or Dutch oven.

Step 3

In a small bowl, combine the minced garlic, olive oil, salt, black pepper, smoked paprika, cumin, brown sugar, apple cider vinegar, and dried oregano to create a paste.

Rub the spice paste all over the pork shoulder, making sure to cover all sides evenly.

Once seasoned, pour the chicken stock (or water) into the bottom of the roasting pan or Dutch oven to keep the meat moist during cooking.
