Ingredients

  • 4 large (about 2 lbs) Russet potatoes
  • 1 whole bulb Garlic
  • 4 tablespoons Unsalted butter
  • 0.75 cup Heavy cream
  • 1 cup Shredded sharp cheddar cheese
  • 0.5 cup Grated Parmesan cheese
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Olive oil
  • 2 tablespoons (optional, for garnish) Fresh chives

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice off the top of the garlic bulb to expose the cloves. Drizzle with 1 teaspoon of olive oil, wrap in aluminum foil, and roast in the oven for 30 minutes until the cloves are soft and caramelized.

While the garlic roasts, peel and cut the potatoes into evenly sized chunks (about 1 1/2 inches).
