  • 1 teaspoon Black pepper
  • 0.5 teaspoon Cayenne pepper (optional)
  • 1 can (12 ounces) Beer (your favorite brand, preferably lager or ale)

Directions

Step 1

Preheat your grill to medium heat (about 375°F/190°C) or preheat your oven to the same temperature.

Remove the giblets and any excess fat from the chicken cavity. Rinse the chicken under cold water and pat it dry with paper towels.

Step 3

In a small bowl, mix together the olive oil, paprika, garlic powder, onion powder, dried thyme, salt, black pepper, and cayenne pepper (if using) to create a flavorful spice rub.

Rub the entire chicken, including under the skin and inside the cavity, with the olive oil and spice mixture.

Open the can of beer and pour out (or drink!) about a quarter of the beer. Use a can opener to widen the top of the can for better steam circulation.
