Heat the olive oil in a large pot or Dutch oven over medium-high heat.
Add the cubed stew beef to the pot and brown on all sides, about 5-7 minutes. Remove the beef and set aside.
In the same pot, add the diced onion and sauté for 3 minutes, until softened.
Stir in the minced garlic and cook for an additional minute, until fragrant.
Add the chopped carrots, celery, and potatoes. Sauté for 5 minutes to slightly soften the vegetables.
Return the browned beef to the pot and pour in the beef broth.
