Ingredients

  • 500 grams Ground beef (preferably 80/20 lean-fat ratio)
  • 30 grams Unsalted butter
  • 2 tablespoons Olive oil
  • 2 medium Yellow onions (thinly sliced)
  • 2 cloves Garlic (minced)
  • 50 grams Breadcrumbs
  • 1 large Whole egg
  • 2 tablespoons Fresh parsley (chopped)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper (freshly ground)
  • 60 milliliters Dry white wine (optional)
  • 60 milliliters Beef stock (or water)

Directions

Step 1

In a mixing bowl, combine the ground beef, breadcrumbs, egg, parsley, salt, and black pepper. Mix gently with your hands until just combined. Be careful not to overwork the mixture.

Step 2

Divide the beef mixture into 4 equal portions and shape into patties. Set aside in the refrigerator while you prepare the onions.

Step 3

In a large skillet, heat 15 grams of butter and 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for 10-12 minutes, or until they are soft and caramelized. Add the minced garlic and cook for an additional 1-2 minutes. Remove the onions from the skillet and set aside.

Step 4

In the same skillet, heat the remaining 15 grams of butter and 1 tablespoon of olive oil over medium-high heat. Sear the beef patties for 3-4 minutes per side, or until browned and cooked through to your desired doneness. Remove the patties from the skillet and keep warm.

Step 5

Deglaze the skillet by adding the white wine, scraping up any browned bits from the bottom of the pan. Let it simmer for 1-2 minutes, then add the beef stock. Cook for another 2-3 minutes, allowing the liquid to reduce slightly.

Step 6

Return the caramelized onions to the skillet and stir them into the sauce. Adjust seasoning with additional salt and pepper if needed.

Step 7

Serve each beef patty topped with a generous spoonful of the caramelized onion sauce. Pair with mashed potatoes or a crisp green salad for a complete meal.
