Ingredients

  • 4 cups yellow squash
  • 1 medium (diced) white onion
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 large eggs
  • 0.5 cup breadcrumbs
  • 0.25 cup parmesan cheese
  • 1 tablespoon olive oil

Directions

Step 1

Preheat the oven to 375°F (190°C). Lightly grease a 9x9-inch baking dish or casserole dish.

Step 2

In a large pot, bring water to a boil. Add the yellow squash slices and cook for 5-7 minutes, or until slightly tender. Drain and set aside.

Step 3

In a skillet over medium heat, melt the butter. Add the diced onion and cook until softened and translucent, about 5 minutes.

Step 4

Stir in the flour and cook for 1 minute, stirring constantly to create a roux. Gradually whisk in the milk and cook until the mixture thickens, about 2-3 minutes.

Step 5

Remove the skillet from heat and stir in the shredded cheddar cheese, salt, and pepper. Mix until the cheese is melted and the sauce is smooth.

Step 6

In a separate bowl, lightly beat the eggs. Temper the eggs by slowly adding a bit of the cheese sauce mixture, one spoonful at a time, whisking constantly. Then, combine the tempered eggs back into the sauce mixture.

Step 7

In the prepared baking dish, layer the cooked yellow squash. Pour the cheese sauce evenly over the top, spreading it out to cover the squash.

Step 8

In a small bowl, combine the breadcrumbs, parmesan cheese, and olive oil. Sprinkle this mixture evenly over the top of the casserole.

Step 9

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbling.

Step 10

Let the casserole cool for 5 minutes before serving. Enjoy!
