  • 500 grams Boneless chicken thighs
  • 8 Fresh red chilies

  • 2 tablespoons Cooking oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Water
  • 1 cup Bhutanese red rice
  • 2 cups Water (for rice)

Directions

Step 1

Start by rinsing the Bhutanese red rice under cold water until the water runs clear. Combine the rice and 2 cups of water in a medium saucepan, bring to a boil, cover, and reduce to a simmer. Cook for 25-30 minutes until the water is absorbed and the rice is tender. Set aside.

Step 2

While the rice cooks, prepare the chile chicken. Dice the boneless chicken thighs into bite-sized pieces and set aside.

Finely chop the red chilies, garlic cloves, and ginger. Dice the onion and tomato into small pieces as well.

Heat 2 tablespoons of cooking oil in a large skillet or wok over medium heat. Add the butter and let it melt, then toss in the garlic, ginger, and chopped red chilies. Sauté for 2-3 minutes until fragrant.
