Ingredients

  • 500 grams fresh okra (bhindi)
  • 3 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 large onion, thinly sliced
  • 1 medium tomato, finely chopped
  • 2 small green chilies, slit lengthwise
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 0.5 teaspoon amchur (dry mango powder)
  • 1 teaspoon salt
  • 2 tablespoons fresh coriander leaves, chopped

Directions

Step 1

Rinse the okra under running water and pat dry completely with a clean kitchen towel. Trim the ends and cut into 1-inch pieces.

Heat the vegetable oil in a large pan over medium heat.

Add cumin seeds to the hot oil and let them splutter for a few seconds.
