Ingredients

  • 2 cups Rolled oats
  • 1 cup Whole wheat flour
  • 2 tablespoons Ground flaxseed
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 0.5 cup Unsweetened applesauce
  • 0.5 cup Honey or maple syrup
  • 0.5 cup Peanut butter or almond butter
  • 1 teaspoon Vanilla extract
  • 1 large Egg
  • 0.5 cup Chopped nuts (e.g., walnuts, almonds, or pecans)
  • 0.5 cup Dried fruit (e.g., raisins, dried cranberries, or chopped apricots)
  • 0.25 cup Dark chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, combine the rolled oats, whole wheat flour, ground flaxseed, baking powder, salt, and cinnamon. Stir until well mixed.

Step 3

In a separate bowl, whisk together the unsweetened applesauce, honey or maple syrup, peanut butter or almond butter, vanilla extract, and egg until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and mix until fully incorporated.

Step 5

Fold in the chopped nuts, dried fruit, and dark chocolate chips (if using).

Step 6

Using a spoon or cookie scoop, drop roughly 2-tablespoon-sized portions of dough onto the prepared baking sheet, flattening them slightly into cookie shapes.

Step 7

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.

Step 8

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Store the cookies in an airtight container at room temperature for up to 5 days, or freeze for longer storage.
