Ingredients

  • 1 cup (trimmed and cut into 1-inch pieces) green beans
  • 1 cup (canned, rinsed and drained) kidney beans
  • 1 cup (canned, rinsed and drained) chickpeas
  • 1 small (thinly sliced) red onion
  • 2 tablespoons (chopped) parsley
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Bring a medium pot of water to a boil and prepare a bowl of ice water on the side.

Step 2

Add the green beans to the boiling water and blanch for 3 minutes, until just tender and vibrant green.

Using a slotted spoon, transfer the green beans immediately to the ice water to stop the cooking process. Let them cool for 1-2 minutes and then drain well.
