Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 6 large ripe tomatoes, chopped
  • 2 tablespoons tomato paste
  • 1 teaspoon sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoons red pepper flakes (optional)
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.5 cup water or vegetable stock
  • 2 tablespoons fresh parsley, chopped
  • 6 fresh basil leaves (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large skillet or saucepan over medium heat.

Step 2

Add the finely chopped onion and sauté until softened and translucent, about 5 minutes.

Step 3

Stir in the minced garlic and cook for another 1-2 minutes, being careful not to let it burn.

Step 4

Add the chopped ripe tomatoes and tomato paste to the pan. Stir well to combine.

Step 5

Sprinkle in the sugar, dried oregano, dried basil, red pepper flakes (if using), salt, and black pepper. Mix thoroughly.

Step 6

Pour in the water or vegetable stock and stir until the sauce begins to simmer.

Step 7

Reduce the heat to low and let it simmer uncovered for 30-35 minutes, stirring occasionally, until the sauce thickens to your desired consistency.

Step 8

Taste and adjust seasoning as needed, adding more salt, pepper, or sugar if necessary.

Step 9

Once the sauce is done, stir in the freshly chopped parsley.

Step 10

Serve hot over your favorite pasta, use as a pizza sauce, or let it cool and store in jars for later use.

Step 11

Garnish with fresh basil leaves if desired.
