Ingredients

  • 450 g elbow macaroni
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 4 cups whole milk
  • 1 cup heavy cream
  • 3 cups cheddar cheese, shredded
  • 2 cups Monterey Jack cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 1 cup panko breadcrumbs
  • 2 tbsp unsalted butter (for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or nonstick spray.

Step 2

Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain and set aside.

Step 3

In a large saucepan, melt 4 tablespoons of butter over medium heat. Once melted, whisk in the flour to create a roux. Cook for 1-2 minutes, whisking constantly, until the mixture is golden and thickened.

Step 4

Gradually whisk in the whole milk and heavy cream, ensuring there are no lumps. Cook the mixture over medium heat, stirring frequently, until it begins to thicken (about 5-7 minutes).

Step 5

Reduce the heat to low, then stir in the cheddar cheese, Monterey Jack cheese, and Parmesan cheese. Continue stirring until the cheese has melted and the sauce is smooth.

Step 6

Season the cheese sauce with salt, black pepper, and paprika. Taste and adjust seasoning if necessary.

Step 7

Add the cooked macaroni to the cheese sauce and stir until the pasta is evenly coated.

Step 8

Transfer the macaroni and cheese mixture to the prepared baking dish, spreading it into an even layer.

Step 9

In a small skillet, melt 2 tablespoons of butter over medium heat. Add the panko breadcrumbs and stir constantly until they are golden brown and toasted (about 2-3 minutes).

Step 10

Sprinkle the toasted panko breadcrumbs evenly over the macaroni and cheese.

Step 11

Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbling.

Step 12

Remove from the oven and let stand for 5 minutes before serving. Enjoy your delicious Bev S Macaroni and Cheese!
