Ingredients

  • 2 pounds Ground beef (80/20 blend)
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 cup Breadcrumbs
  • 0.5 cup Milk
  • 2 large Eggs
  • 0.25 cup Ketchup
  • 1 tablespoon Worcestershire sauce
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper, freshly ground
  • 2 teaspoons Dried parsley
  • 0.5 cup Ketchup (for glaze)
  • 2 tablespoons Brown sugar
  • 1 teaspoon Apple cider vinegar

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

Step 2

In a large mixing bowl, combine the ground beef, chopped onion, minced garlic, breadcrumbs, milk, eggs, ketchup, Worcestershire sauce, salt, black pepper, and dried parsley.

Step 3

Using clean hands or a sturdy mixing spoon, gently mix the ingredients until just combined. Avoid over-mixing, as this can make the meatloaf dense.

Step 4

Transfer the meat mixture to the prepared baking sheet or loaf pan. Shape it into a loaf approximately 8 inches long and 4 inches wide, smoothing the surface with your hands.

Step 5

In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar to make the glaze.

Step 6

Spread half of the glaze evenly over the top of the meatloaf, reserving the other half.

Step 7

Place the meatloaf in the preheated oven and bake for 45 minutes.

Step 8

Remove the meatloaf from the oven and spread the remaining glaze over the top. Return it to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).

Step 9

Let the meatloaf rest for 10 minutes before slicing. This allows the juices to redistribute, resulting in a tender and moist slice.

Step 10

Serve warm with your favorite sides, such as mashed potatoes and green beans. Enjoy!
