Ingredients

  • 1 pound Ground beef
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 14.5 ounces Canned diced tomatoes
  • 8 ounces Tomato sauce
  • 1 cup Beef broth
  • 2 cups Dry elbow macaroni pasta
  • 1 medium Carrot, diced
  • 1 cup Frozen peas
  • 2 cups Cheddar cheese, shredded
  • 1 tablespoon Vegetable oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Dried Italian seasoning

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch casserole dish.

Step 2

In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.

Step 3

Add the garlic to the skillet and sauté for 1 minute until fragrant.

Step 4

Add the ground beef to the skillet. Cook and crumble the beef until it is browned and cooked through, about 6-8 minutes. Drain any excess grease.

Step 5

Stir the diced tomatoes, tomato sauce, beef broth, salt, black pepper, and Italian seasoning into the skillet. Bring the mixture to a gentle simmer and let it cook for 5 minutes to combine the flavors.

Step 6

In the meantime, bring a large pot of salted water to a boil. Cook the elbow macaroni according to the package instructions until al dente. Drain the pasta and set aside.

Step 7

Add the diced carrot and frozen peas to the skillet with the beef mixture. Stir well to combine.

Step 8

Turn off the heat and fold the cooked macaroni into the beef and vegetable mixture.

Step 9

Transfer the mixture into the prepared casserole dish and spread evenly. Sprinkle the shredded cheddar cheese generously over the top.

Step 10

Place the casserole dish in the preheated oven and bake for 20 minutes, or until the cheese is melted and bubbly.

Step 11

Remove the casserole from the oven and let it rest for 5 minutes before serving. Enjoy your hearty and delicious meal!
