Ingredients

  • 250 grams Mashed potatoes (without butter or milk)
  • 150 grams Almond flour
  • 200 grams Granulated sugar
  • 100 grams Unsalted butter, softened
  • 4 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder (gluten-free)
  • 0.25 teaspoon Salt
  • 0.5 teaspoon Ground cinnamon (optional, for garnish)
  • 2 tablespoons Powdered sugar (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9-inch (23 cm) round cake pan or line it with parchment paper.

Step 2

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy using a handheld or stand mixer.

Step 3

Add the eggs one at a time to the butter mixture, beating well after each addition.

Step 4

Mix in the vanilla extract and mashed potatoes, ensuring that the potatoes are well-incorporated and there are no lumps.

Step 5

In a separate bowl, whisk together the almond flour, gluten-free baking powder, and salt.

Step 6

Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.

Step 7

Pour the batter into the prepared cake pan, smoothing the top with a spatula.

Step 8

Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center of the cake comes out clean.

Step 9

Remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

Step 10

Once cooled, optionally dust the top of the cake with powdered sugar and a sprinkle of ground cinnamon before serving.
