Ingredients

  • 2 cups All-purpose flour
  • 0.75 cups Granulated sugar
  • 2 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 0.5 cups Milk
  • 0.25 cups Vegetable oil
  • 1 large Egg
  • 1 teaspoons Vanilla extract
  • 1 cup Fresh or frozen blueberries
  • 2 tablespoons Granulated sugar (optional for topping)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners or lightly grease it with cooking spray.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

Step 3

In a medium bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until blended.

Step 4

Add the wet ingredients to the dry ingredients and stir gently with a wooden spoon or rubber spatula until just combined. Avoid overmixing—the batter will be lumpy, which is normal.

Step 5

Gently fold in the blueberries, taking care not to overmix to prevent the batter from turning purple.

Step 6

Using a spoon or ice cream scoop, divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

Step 7

If desired, sprinkle a little granulated sugar on top of each muffin for an added crunch and sweetness.

Step 8

Bake in the preheated oven for 18–22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Remove the muffins from the oven and let them cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Step 10

Serve warm or at room temperature and enjoy!
