Ingredients

  • 8 ounces Elbow macaroni
  • 2 tablespoons Salted butter
  • 2 tablespoons All-purpose flour
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground mustard
  • 2 cups Milk
  • 2 cups Shredded sharp cheddar cheese
  • 0.5 cups Panko breadcrumbs (optional, for topping)
  • 2 tablespoons Butter (melted, for breadcrumbs)

Directions

Step 1

Preheat the oven to 375°F (190°C) and lightly grease a 2-quart baking dish if planning to bake the mac & cheese.

Step 2

Cook the elbow macaroni according to the package directions until al dente. Drain and set aside.

Step 3

In a medium saucepan, melt 2 tablespoons of butter over medium heat.

Step 4

Whisk in the flour, salt, and ground mustard. Cook for about 1 minute, whisking constantly, to form a smooth paste.

Step 5

Gradually add the milk, about 1/4 cup at a time, whisking continuously to avoid lumps. Cook until the mixture thickens, about 3-5 minutes.

Step 6

Reduce the heat to low and stir in the shredded cheddar cheese until melted and smooth.

Step 7

Remove the saucepan from heat. Add the cooked macaroni and stir to coat the pasta in the cheese sauce.

Step 8

If baking: Transfer the mac & cheese to the prepared baking dish. In a small bowl, mix the panko breadcrumbs with 2 tablespoons of melted butter and sprinkle the mixture on top of the mac & cheese.

Step 9

Bake for 15-20 minutes, or until the topping is golden brown and the mac & cheese is bubbling.

Step 10

Serve hot and enjoy classic, creamy mac & cheese!
