Ingredients

  • 6 pieces Large eggs
  • 2 tablespoons Whole milk
  • 1 tablespoon Butter
  • 1 medium Red bell pepper, diced
  • 0.5 medium Yellow onion, finely chopped
  • 1 small Fresh jalapeño, finely diced (optional)
  • 10 pieces Cherry tomatoes, halved
  • 0.5 cup Shredded cheddar cheese
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Chili powder
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 2 tablespoons Fresh cilantro, chopped
  • 1 handful Tortilla chips (optional, for serving)

Directions

Step 1

In a medium bowl, crack the eggs and whisk them together with the milk until fully combined. Set aside.

Step 2

Heat a large nonstick skillet over medium heat and add the butter. Once melted, swirl it around the pan to coat the surface evenly.

Step 3

Add the diced red bell pepper, chopped onion, and jalapeño (if using) to the skillet. Sauté for 2-3 minutes, or until the vegetables are softened.

Step 4

Stir in the halved cherry tomatoes and cook for another 1-2 minutes until they begin to soften and release some of their juices.

Step 5

Reduce the heat to medium-low. Pour the whisked eggs into the skillet, stirring gently and continuously to create soft, creamy curds.

Step 6

When the eggs are about halfway cooked, sprinkle in the ground cumin, chili powder, salt, and ground black pepper. Stir to evenly distribute the spices.

Step 7

Add the shredded cheddar cheese and continue stirring until the eggs are fully cooked but still moist and creamy.

Step 8

Remove the skillet from the heat and garnish the scrambled eggs with freshly chopped cilantro.

Step 9

Serve immediately with tortilla chips on the side, if desired, or enjoy as-is for a flavorful Tex-Mex breakfast.
