Ingredients

  • 1 approximately 3-4 lbs (with giblets removed) whole chicken
  • 2 large, chopped into chunks carrots
  • 2 chopped into chunks celery stalks
  • 1 large, quartered yellow onion
  • 4 peeled and slightly smashed garlic cloves
  • 6 sprigs fresh parsley
  • 4 sprigs fresh thyme
  • 2 bay leaves
  • 1 teaspoon whole peppercorns
  • 1 tablespoon (adjust to taste) kosher salt
  • 16 cups (or enough to cover the chicken and vegetables) cold water

Directions

Step 1

Place the whole chicken in a large stockpot (at least 8 quarts in size).

Step 2

Add the chopped carrots, celery, and quartered onion around the chicken.

Step 3

Add the garlic cloves, parsley, thyme, bay leaves, whole peppercorns, and kosher salt to the pot.

Step 4

Pour in the cold water until the chicken and vegetables are fully submerged, approximately 16 cups.

Step 5

Place the pot over medium-high heat and bring the water to a gentle boil.

Step 6

Once boiling, reduce the heat to low to maintain a simmer. Use a spoon to skim off any foam or impurities that rise to the surface during cooking.

Step 7

Simmer uncovered for about 2.5 to 3 hours, occasionally skimming the surface and stirring gently.

Step 8

Carefully remove the chicken and set it aside. Once cool enough to handle, shred or chop the chicken meat for later use, if desired.

Step 9

Strain the broth through a fine-mesh sieve or cheesecloth into another large pot or container, discarding the solids.

Step 10

Let the broth cool completely. If not using immediately, refrigerate it for up to 4 days or freeze for longer storage.
