Ingredients

  • 16 oz (drained) Sauerkraut
  • 1 medium (diced) Red bell pepper
  • 1 medium (diced) Green bell pepper
  • 2 medium (grated) Carrot
  • 2 stalks (diced) Celery stalks
  • 1 medium (finely diced) Onion
  • 0.5 cup Sugar
  • 0.5 cup White vinegar
  • 0.25 cup Vegetable oil
  • 0.25 tsp Black pepper
  • 0.25 tsp (optional) Salt

Directions

Step 1

Drain the sauerkraut thoroughly, squeezing out any excess liquid using your hands or a clean kitchen towel. Place the drained sauerkraut in a large mixing bowl.

Step 2

Add the diced red bell pepper, green bell pepper, grated carrots, diced celery, and finely diced onion to the bowl with the sauerkraut. Mix gently to combine.

Step 3

In a small saucepan, combine the sugar, white vinegar, and vegetable oil. Heat over medium-low heat, stirring constantly, until the sugar is completely dissolved. Remove from heat and let the mixture cool slightly.

Step 4

Pour the dressing over the sauerkraut and vegetable mixture. Add the black pepper and salt (if using). Toss everything together until well coated.

Step 5

Cover the bowl with plastic wrap or transfer the salad to an airtight container. Refrigerate for at least 4 hours or overnight to allow the flavors to meld together.

Step 6

Before serving, give the salad a good stir. Serve chilled as a side dish or as a topping for sandwiches and burgers.
