Ingredients

  • 2 cups pumpkin puree
  • 2 medium potatoes
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion
  • 2 cloves garlic
  • 4 cups chicken or vegetable broth
  • 0.5 cups heavy cream (or coconut milk for dairy-free)
  • 0.25 teaspoons ground cinnamon
  • 0.25 teaspoons ground nutmeg
  • 1 teaspoons salt
  • 0.5 teaspoons pepper
  • 2 tablespoons fresh parsley (for garnish)
  • 2 tablespoons sour cream (optional, for serving)

Directions

Step 1

Peel and dice the potatoes into small, bite-sized pieces.

Step 2

Finely chop the yellow onion, and mince the garlic cloves.

Step 3

In a large pot, melt the unsalted butter over medium heat. Add the chopped onion and cook until translucent, about 5-7 minutes.

Step 4

Stir in the garlic and cook for another 1 minute until fragrant.

Step 5

Add the diced potatoes and chicken or vegetable broth to the pot. Raise the heat to high and bring to a boil, then reduce the heat to medium and simmer for 15-20 minutes, or until the potatoes are tender.

Step 6

Add the pumpkin puree, ground cinnamon, ground nutmeg, salt, and pepper to the pot. Stir well to combine, and simmer for an additional 5 minutes.

Step 7

Remove the pot from heat, and carefully use an immersion blender to puree the soup until smooth. Alternatively, allow the soup to cool slightly and blend in batches using a countertop blender.

Step 8

Stir in the heavy cream (or coconut milk) and adjust the seasoning with additional salt and pepper if needed.

Step 9

Reheat the soup gently over low heat if it has cooled. Do not allow it to boil.

Step 10

Ladle the soup into bowls and garnish with fresh parsley. Optionally, add a dollop of sour cream for extra creaminess.

Step 11

Serve warm with your favorite crusty bread or crackers.
