Ingredients

  • 200 grams fettuccine pasta
  • 2 pieces chicken breast
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 cup heavy cream
  • 1.5 cups Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 0.25 cup red onion, thinly sliced
  • 3 tablespoons balsamic vinaigrette
  • 1 loaf garlic bread or baguette
  • 1 teaspoon Italian seasoning

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccine according to the package instructions until al dente. Reserve 1/4 cup of pasta water, then drain and set aside.

Step 2

While the pasta is cooking, season the chicken breasts with salt, pepper, and Italian seasoning on both sides.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and let it rest before slicing into thin strips.

Step 4

In the same skillet, reduce the heat to medium-low. Add 2 tablespoons of butter and the minced garlic. Cook for 1-2 minutes until the garlic is fragrant.

Step 5

Pour in the heavy cream and stir well. Cook for 2-3 minutes, then gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy. If the sauce is too thick, add reserved pasta water a tablespoon at a time to reach your desired consistency.

Step 6

Add the drained fettuccine to the skillet and toss to coat in the Alfredo sauce. Season with additional salt and pepper if needed.

Step 7

Prepare the salad by combining the mixed greens, cherry tomatoes, and red onion in a bowl. Drizzle with balsamic vinaigrette and toss gently.

Step 8

Serve the creamy chicken Alfredo on plates, topped with sliced chicken. Add the side salad to the plates.

Step 9

Optionally, warm the garlic bread or baguette in the oven according to the package instructions, and serve alongside the meal.
