Preheat your oven to 325°F (163°C).
In a large oven-safe skillet or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon and place it on a paper-towel-lined plate. Once cooled, crumble the bacon and set it aside.
In the same skillet, using the bacon drippings, sauté the diced onion until translucent, about 5 minutes.
