Ingredients

  • 3 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 4 large Yellow onions
  • 1 teaspoon Sugar
  • 3 cloves Garlic
  • 1 cup Dry white wine
  • 6 cups Beef broth
  • 4 sprigs Fresh thyme
  • 1 Bay leaf
  • 2 teaspoons Worcestershire sauce
  • 1 loaf French baguette
  • 2 cups Gruyere cheese
  • 0.5 cup Parmesan cheese
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Peel and thinly slice the yellow onions into even slices.

Step 2

In a large heavy-bottomed pot or Dutch oven, melt the butter with the olive oil over medium heat.

Step 3

Add the sliced onions and sugar to the pot and stir to coat. Cook, stirring occasionally, for 25-30 minutes until the onions are deeply caramelized and golden brown.

Step 4

While the onions are caramelizing, mince the garlic cloves.

Step 5

Once the onions are caramelized, add the minced garlic and cook for 1 minute until fragrant.

Step 6

Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom. Let the wine simmer and reduce by half, about 3-4 minutes.

Step 7

Add the beef broth, thyme sprigs, bay leaf, and Worcestershire sauce to the pot. Stir to combine. Bring the soup to a simmer and cook for 20 minutes to develop the flavors.

Step 8

Season the soup with salt and black pepper to taste. Discard the thyme sprigs and bay leaf before serving.

Step 9

Preheat your oven's broiler while the soup simmers.

Step 10

Slice the French baguette into 1-inch thick rounds. Place the slices on a baking sheet and toast in the broiler for 1-2 minutes on each side until lightly golden.

Step 11

Ladle the hot soup into oven-safe bowls, leaving about 1 inch of space at the top.

Step 12

Place 1-2 toasted baguette slices on top of the soup in each bowl. Sprinkle a generous amount of Gruyere and Parmesan cheese over the bread and soup.

Step 13

Place the bowls on a baking sheet and broil in the oven until the cheese is melted, bubbly, and golden brown, about 2-3 minutes.

Step 14

Carefully remove the bowls from the oven. Let cool slightly before serving and enjoy!
