Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic cloves, minced
  • 2 cans diced tomatoes (with juices)
  • 1 can kidney beans (drained and rinsed)
  • 1 can pinto beans (drained and rinsed)
  • 1 can corn kernels (drained, if canned)
  • 1 can tomato sauce
  • 3 cups beef broth
  • 1 packet taco seasoning mix
  • 1 packet ranch dressing mix
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper (optional, for extra heat)
  • 0.25 cup fresh cilantro, chopped (optional for garnish)
  • 1 cup shredded cheddar cheese (optional, for serving)
  • 0.5 cup sour cream (optional, for serving)
  • 2 cups tortilla chips or strips (optional, for serving)

Directions

Step 1

In a large pot or Dutch oven, heat olive oil over medium heat.

Step 2

Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess grease and return the beef to the pot.

Step 3

Add the chopped onion and minced garlic to the pot. Cook for 3-4 minutes, or until the onion becomes translucent and fragrant.

Step 4

Stir in the taco seasoning mix and ranch dressing mix, coating the beef and onion mixture evenly.

Step 5

Add the diced tomatoes (with juices), kidney beans, pinto beans, corn kernels, tomato sauce, and beef broth to the pot. Stir everything together well.

Step 6

Season with salt, black pepper, and cayenne pepper if desired. Bring the mixture to a boil.

Step 7

Once boiling, reduce the heat to a simmer. Cover the pot and let it simmer for 20-25 minutes, allowing the flavors to meld together.

Step 8

Taste and adjust seasonings as needed. If the soup is too thick, add a little more beef broth to reach the desired consistency.

Step 9

Serve hot, garnished with chopped fresh cilantro, shredded cheddar cheese, a dollop of sour cream, and crumbled tortilla chips or strips if desired.
