  • 1 lb Italian sausage (mild or spicy)
  • 4 medium Russet potatoes
  • 1 medium Yellow onion
  • 4 large Garlic cloves
  • 6 cups Chicken broth
  • 1 cup Heavy cream
  • 4 cups Fresh kale
  • 1 tbsp Olive oil
  • 0.5 tsp Red pepper flakes (optional)
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 0.5 cup Parmesan cheese (for garnish)
  • 2 cups Water

Directions

Step 1

Heat a large soup pot over medium heat and add the olive oil.

Step 2

Remove the casing from the Italian sausage and crumble it into the pot. Cook until browned and fully cooked, about 7-10 minutes. Remove the sausage from the pot and set aside, leaving any rendered fat behind.

Step 3

While the sausage cooks, wash and peel the potatoes. Slice them into thin rounds, about 1/4-inch thick, and set aside.

Chop the onion into small, even-sized pieces. Mince the garlic cloves.

Step 5

In the same pot, add the chopped onion and garlic to the rendered fat. Cook until fragrant and translucent, about 3-5 minutes.
