  • 2 pieces Boneless, skinless chicken breasts
  • 6 cups Chicken broth
  • 2 cups Water
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Dried parsley
  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 4 tablespoons Unsalted butter, cold
  • 1 cup Milk
  • 0.5 cup Heavy cream
  • 1 cup Frozen peas and carrots

Directions

Step 1

Place the chicken breasts in a large pot. Add chicken broth, water, salt, pepper, and parsley to the pot.

Step 2

Bring the mixture to a boil over medium-high heat, then reduce heat to a simmer. Cover the pot and cook the chicken for 15-20 minutes, or until fully cooked and easily shreddable.

Remove the chicken from the pot and shred using two forks. Leave the broth in the pot and keep it simmering on low heat.
