  • 2 sheets puff pastry sheets
  • 8 oz cream cheese
  • 16 pieces pitted green olives (small)
  • 2 tbsp grated Parmesan cheese
  • 1 egg
  • 1 tbsp water
  • 2 tbsp fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

On a lightly floured surface, roll out the puff pastry sheets to smooth any creases. Cut each sheet into 8 equal squares, making a total of 16 squares.

Step 3

In a small bowl, mix the cream cheese and grated Parmesan cheese until smooth and well-combined.

Place about 1 teaspoon of the cream cheese mixture in the center of each puff pastry square.

Press one pitted green olive, cut side down, into the cream cheese mixture on each square. The olive should resemble the 'iris' of the 'eye.'
