Ingredients

  • 1 cup unsalted butter
  • 1 cup light brown sugar
  • 0.5 cup granulated sugar
  • 2 pieces large eggs
  • 2 teaspoons pure vanilla extract
  • 1.75 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins (optional)
  • 0.5 cup chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, use a hand mixer or stand mixer to cream together the butter, light brown sugar, and granulated sugar until the mixture is light and fluffy, about 2-3 minutes.

Step 3

Add the eggs one at a time, beating well after each addition. Then mix in the vanilla extract until combined.

Step 4

In a separate medium mixing bowl, whisk together the flour, baking soda, cinnamon, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.

Step 6

Using a spatula, fold in the rolled oats. If desired, also add the raisins and/or walnuts at this stage.

Step 7

Using a cookie scoop or tablespoon, drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden. The centers may still look slightly underbaked but will firm up as the cookies cool.

Step 9

Remove the cookies from the oven and let them sit on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to a week. Enjoy!
